Each Roselli carving knife is made by hand in our workshop in Harmoinen, Finland, where our artisan knife makers continue the tradition of Finnish knife-making. Every blade is individually ground and sharpened to achieve clean bite in wood without tearing the grain. Roselli's Premium Carbon Steel strikes an ideal balance between sharpness and durability. Although it is not as hard as our UHC Steel, it delivers a keen edge and excellent edge retention. With 0.8% carbon content and a hardness rating of up to 60 HRC, this steel is well-suited for more demanding tasks.
Roselli UHC Steel is renowned for its high carbon content (1.8-2.0%) and exceptional hardness, measuring around 62-63 HRC. This makes it capable of maintaining a razor-sharp edge for extended periods. While its hardness requires more careful handling, it's the ideal choice if you prioritize edge retention.
Roselli's Handmade Damascus Steel Knives are unique masterpieces, meticulously crafted by our blacksmith, who was personally trained in the art of forge welding Damascus steel by Heimo Roselli himself.
